the story began when we visited my foster parent's hse or i shall say my kakak n abg angkt here la, n k.eija taught us a simple and convenient way to make kueh seri muka. then we decided to try it ourselves. here's the recipe:
[bottom layer]
1. 2 1/2 cup glutinuos rice (soak for at least 1/2hr)
2. 1 cup thick coconut milk
3. salt to taste
Drain the rice and add in some water. (caution: water level must be only slightly higher than the rice level). cover the container with cling film and microwave for 5 mins. After the rice has smoothen a bit, add in the coconut milk and salt and mix them well. Leave in the microwave again for 2-4 mins. When it's done, Transfer the rice into a glass container/anything alike and press the rice down to level the surface. Set aside. (Make sure sapu mentega/margerine on the inside of the container first so it won't stick)
[top layer]
1. 1 1/2 cup sugar
2. 2 1/2 cup thick coconut cream
3. 4 1/4 teaspoon custard flour
4. 5 eggs
5. salt
6. pandan flavour/ green colourings / screwpine leaves juice
Combine all the ingredients above until well mixed. Strain. Then pour it onto the bottom layer prepared earlier. Microwave for 12-13mins. start off with the high heat then after 4-5 mins lower it down to medium high or medium.
Wanna knw the tragedy behind our seri muka?hehee..
well for a first timer, the taste was not bad at all i wud say..haha but the presentation was way off laa..1st, the top layer wasn't very smooth!we reckoned it ws because our cling film wasnt tight enuf. 2nd, the top layer ws SUPPOSED to be green but it turned out to be yellowish green instead..haha we thought it might be becoz of he custard colour tht overshadowed the green colorings. and 3rd, we cnt even cut the kueh coz the pulut ws too sticky! it's entirely our fault la cz we misunderstood the instruction :p we put in too much water..it's supposed to be "slightly higher than the glutinous rice level"..but we thought; "slightly higher than the normal rice water level"...
